Ingredients: 80 g freekeh (uncooked); 3 tsp olive oil; 3 cloves garlic (crushed); 1/3 cup fresh parsley (chopped); 3/4 Lebanese cucumber (chopped); 125 g cherry tomatoes ( quartered); 1/3 red onion (thinly sliced); 2 tbsp walnuts (chopped); 150 g haloumi cheese (sliced ); 3/4 lemon (juiced)
